Lemon squares

On this page, we're sharing our most beloved French-Canadian, Acadian and Québécois dishes : classics from grand-maman. Here is a dessert classic, the lemon square.

Lemon squares

Ingredients

Filling:

  • Juice and zest of 1 lemon

  • 300 ml sweetened condensed milk

  • 1 tsp lemon extract

Icing:

  • 1 cup brown sugar

  • 3 tbsp butter

  • 4 tbsp evaporated milk

  • 1 tsp vanilla extract

 

Plus:

  • Graham wafers (quantity will depend on the size of your pan; I typically use a square 8" x 8" pan) 


Combine all filling ingredients in a bowl; mix well.

Combine all icing ingredients in a saucepan and boil for 10 minutes on low heat. Remove from heat and stir to the consistency of "sucre à la crème" (fudge).

In an 8" x 8" (20 cm x 20 cm) square pan, lay down a layer of whole graham wafers. On top of this layer, add a layer of the filling. Add one more layer of wafers, then add the remainder of the filling. Finish with a final layer of wafers.

Top with the icing and refrigerate for 24 hours before serving.

To double the recipe, use a 9" x 13" (23 cm x 33 cm) pan.
